Starting with Android 6.0, mandatory full disk data encryption was introduced.
What does this mean?
It means there is no need to encrypt your device running Android 6.0 and higher. It is automatically done for you.
How can I tell if my device is running Android 6.0 or higher?
Settings > About Phone > Android version
Settings > System > About Phone > Android version
Okay, but how can I tell my device is really encrypted?
Settings > Security (or Security & Location) > Scroll down to Encryption and Credentials and you will see Phone Encrypted.
When encrypted my phone used to ask for my password on startup, why doesn't it do this?
With the new form of encryption, this isn't necessary. As long as you have a screen lock on your device, you're information is protected.
